For the Romesco Sauce: Quarter 2 cups roasted red peppers, add 4 cloves garlic, 1 tbsp toasted almonds, 2 tbsp grapeseed oil, ½ lemon juice, salt and pepper. Eggplant Puree: 1 large eggplant, 2 cloves garlic, zest and juice of 1 lemon, 1 cup olive oil. Serve 4.
